Courgette and Green Tomato Chutney
Ingredients
- 1kg diced courgettes.
- 1kg peeled and diced green tomatoes.
- 500g peeled and diced onions.
- 500g peeled, cored and diced cooking apples.
- 500g soft brown sugar.
- 500g sultanas.
- 600ml white wine vinegar.
- 1 mulled wine sachet.
Method
- Put all ingredients into a large saucepan with the spice sachet.
- Bring ingredients slowly to the boil making sure that you stir occasionally.
- Leave the pan uncovered and simmer for 2-3 hours - stir occasionally so that the mixture doesn’t stick to the bottom of the pan or burn.
- The ingredients will reduce down and the chutney will be ready when it has thickened.
- Remember to remove the spice sachet before bottling.
- Sterilise jars in a hot oven for a few minutes.
- Put the chutney in the sterilised jars whilst it is still warm.
- Make sure the jars have plastic lids because the vinegar will react with metal lids.
- Leave the chutney to mature for at least 2 weeks and up to a couple of months.
This recipe made 3kg of chutney so as you can imagine we had alot of jars. This courgette and green tomato chutney makes an excellent homemade gift for your food loving friends and family. My friends and family thought it was so delicious that they kept returning the empty jars in the hope that I would swop them for more full ones!

Sara, I’ve never eatten a chutney before but this sounds very good with the chicken breast!
I need to ask you what the nice matters award nomination is about. Is there something I need to do?
Now we are getting too much rain. Local towns are being flooded and people seem to have had enough with living where they do. They’ve gotten flooded nearly every year for the last few years.

Hi Lynn,
I am so sorry that you are getting alot of rain and that the local towns are flooding. We know how awful this is. My thoughts go out to all those affected by flooding.
The chutney is well worth a try and smeared on chicken breast and cooked gives the chicken a real tangy flavour.
With the Nice Matters Award I think what normally happens is you write a post about the Nice matters Award saying who nominated you and then you nominate some other people. Then you copy the award logo and place it in your sidebar so that everyone can see that you have been awarded this award - if you want to that is.
Hope this helps. Thanks for your comments.

Hi Charlotte & Freddie,
I can’t wait to make my vegetable face. I think I will also do this with my school gardening club. Another excellent, inspirational idea.
Thanks for sharing.

This looks great Sara, I am going to give up on my tomatoes this year which are going mouldy as they ripen, and make your chutney with the green ones that are still looking beautiful.

Hi Saz,
Thank for the compliment. I’m sorry that your tomatoes don’t seem to be ripening. Let me know how you get on with the chutney.
