Courgette And Zucchini Recipes

I love courgettes / zucchinis and this year I was hoping for many courgettes that I would be able to cook in many different ways trying out new and interesting recipes I have found in the blogging world.

I planted twenty courgette plants earlier in the season and all the plants were doing very well when the floods of June washed the vegetable garden away. Most of my vegetables were lost as they sat in deep water for a week which rotted away the roots to the plants.

I was pleased that two of my courgette plants have managed to survive the floods and now have courgettes growing. In a day or two I will be able to start picking these fabulous vegetables and I can’t wait.

I am interested in hearing from anyone who has courgette and zucchini recipes that they would be willing for me to link to and even try out and review.

I have already started to make a list of how many different ways you can cook courgette and have compiled the following list;

  3. I am so pleased that two of your courgette plants survived, Sara.

    We made courgette soup last year and it was delicious but I can’t remember where we found the recipe. I must look it up.

    That’s great - thanks for replying so quickly. I will be checking out your recipes. Thanks for commenting. I harvested my first zucchini today which is like a miracle as the courgette plant had previously been under flood water. I will be trying your recipe soon.

  10. Hi, roasted courgette and parmesan soup is good. I don’t really have a recipe. Just roast a load of courgettes with an onion and garlic and olive oil at 200c for about 45 mins until it is nicely browned, then blend with a good portion of parmesan. You might need a bit of veg stock depending on how big and moist the courgettes are. Season as you like. Sprinkle a fistful of chopped basil over the top when you serve. Great with just baked ciabatta.

    Thanks so much for this recipe. I will add it to my list of recipes. It sounds delicious and just arrived at the time when I have an abundance of courgettes!!
