I use malt vinegar that I boil with sugar and the beetroot lasts for months and months.
Let me know how you get on with boiling and adding sugar. It will be interesting to see if this does make a difference.

I think you hit the nail on the head with the vinegar.I used cold spiced vinegar.
Perhaps if I used boiled malt vinegar with sugar it might be allright.

Did you boil the vinegar before you put the beetroot into it as I have read that cold vinegar can cause a scum on the beetroot. Also have you added anything else in with the vinegar that could have reacted with the vinegar?

You can add the vinegar cold or you can boil it. I usually heat the vinegar because I add a little sugar and that reduces the vinegary taste. Obviously when adding sugar I need to heat it to dissolve the suagr. I am experimenting with different sorts of vinegars and trying them old or warmed up with hard boiled quail eggs.
