Roasted Courgette And Parmesan Soup - A Reader’s Recipe
I was delighted to receive this fantastic reader’s recipe for Roasted Courgette And Parmesan Soup by Tony from Cambridge. I thought that it sounded so good that I would share it with you all.
Hi, roasted courgette and parmesan soup is good. I don’t really have a recipe.
- Just roast a load of courgettes with an onion and garlic and olive oil at 200c for about 45 mins until it is nicely browned, then blend with a good portion of parmesan.
- You might need a bit of veg stock depending on how big and moist the courgettes are. Season as you like.
- Sprinkle a fistful of chopped basil over the top when you serve. Great with just baked ciabatta.

Funnily enough, we’ve not had a courgette glut this year. Usually my cousin, aunt and Mum are trying to palm them off onto me. This is despite the fact that I *really* don’t like them. That is, of course, unless they’re in my courgette cake recipe..

Hi Lucy,
My courgette plants are just beginning to grow lots of lovely courgettes so I will certainly be making that lovely cake again. It’s hard to believe that it was a year ago that you swopped that recipe with me and that we are now about to start thedailygoodlife videologs. Blogging pals are great.

I don’t have a courgette recipe but I like to steam all my veggies in the microwave as they keep all their flavours better.
Here’s a mixture I do in the microwave. Steam a few new potatoes (10mins), some courgettes (3mins), some sugarsnaps (2mins).
Then saute some leeks and red/green/yellow and red peppers in butter in a pan. Add the potatoes, courgettes and sugarsnaps and a handful of pinenuts for some extra crunch.
Place all the veggies in an open dish. Eat on their own…or with anything you like such as meat/fish/chicken.

Now I don’t have an overflow of courgettes (maybe because I’m not growing any?), but this recipe sounds terrific. I also love ciabatta… Hmmm, may be inspiration for this weekend. Thanks, Sara!
